This month I have been trying my hands on some quick, easy to make and quirky recipes that are nothing but memorable. Thanks to my Punjabi friend’s wedding that I attended recently, I discovered an altogether different take on the way we look at food. For example, mixing of two taste palettes or even better, trying your hand at never thought before recipes that combines your love for two varied yet distinctive tastes. So much so that even the Chefs were surprised with the few added recipe changes for the better. It was here that I discovered the mixing of sweet honey and spicy chilly palette in a barbeque fish that led to my imagination running wild.
When I came back to the bay, my heart still yearned for the sweet and spicy mix but I wanted to add my own zing to it by trying a different combination with boneless chicken. A couple of trials and errors led me to this incredible Sweet & Spicy Crispy Honey Chilly Chicken recipe that literally takes you on a food paradise.

Here’s the Sweet & Spicy Crispy Honey Chilly Chicken recipe :
Marinate the boneless chicken pieces with ginger paste, salt, white pepper powder and soya sauce for an hour at least so that the chicken soaks in all the ingredients. For coating the chicken we would need maida, corn flour, salt and pepper to be mixed. Along with that keep a separate bowl ready with egg mixed with little milk and beat them for 5 minutes. Here is how you follow the coating steps – First cover the boneless chicken in maida mixture, then dip it in egg and then cover it up with the maida mixture again. This ensures that your chicken gets crispiness and the egg adds a soft texture on the top covered with the maida mixture again.
Once you have covered all the pieces of boneless chicken in the maida-egg-maida coating, you can now heat oil and prepare for frying them till the colour gets a little brownish. Don’t forget to keep turning the chicken pieces till they look evenly brownish from all sides.
Sauce Preparation :
For the sauce, take a pan and put ½ cup water, vinegar, soya sauce, honey, red chilly sauce, brown sugar, salt, black pepper powder and mix it while you keep stirring it over a low flame. Meanwhile, in a bowl mix 1 tblsp corn flour and 2 tblsp water and mix this with the sauce. You could add to this the excess chicken fried oil. Once you have stirred the sauce mixture for about 5-6 minutes, take chicken on a plate and add this sauce on top of it. Add some finely chopped green onions on the top and your sweet and spicy crispy honey chilly chicken is ready to be served.
